We now know that beyond just storage convenience  wine kept in oak barrels takes on properties that considerably improve the wine by making it softer and, if the winemaker knows what he or she is doing it definitely improves tasting.  We were really impressed with the quality of the barrels selected by Crushpad in Bordeaux to store our first wines.
